1. Pat the mackerel fillet dry and season both sides with salt and black pepper. 2. Heat olive oil in a non-stick pan over medium-high heat. 3. Place the mackerel skin-side down and cook for 4-5 minutes until the skin is crispy. 4. Flip the fillet and cook for another 2-3 minutes until cooked through. 5. In a small bowl, mix lemon juice, lemon zest, minced garlic, honey, and chopped parsley to make the sauce. 6. Remove the fish from the pan and drizzle the lemon herb sauce over the top. 7. Serve immediately with mixed salad greens if desired.
